Grilling Season Does Not End, It Adds a Layer

Grilling season does not end in October. It asks for a jacket.

The shorter days and cooler air change the routine, but they do not cancel it. Some of the best meals of the year happen when the light is low and you can see your breath over the grill. The trick is to plan a little more than you did in July.

Start Earlier Than You Think

Cool air and wind make a grill take longer to come up to temperature. A preheat that took ten minutes in August may take noticeably longer now, especially on a windy evening. Light the grill earlier than feels necessary, and use the wait to gather what you need.

Watch the Light

The sun sets earlier every week. Dinner that used to happen in the golden hour now happens in the dark. Put a flashlight, or a small clip-on light, where you can reach it without moving. Grilling by phone flashlight is a good way to lose a spatula.

Check the Fuel Before Dark

Look at your propane or charcoal before you need it, not halfway through. It is much easier to sort out a low tank at four in the afternoon than at six-thirty with hungry people waiting.

Mind the Wind

A steady breeze can push heat and smoke in directions you did not plan. Find a spot that is sheltered but still safe. Keep the grill clear of siding, railings, and overhangs, and give it plenty of space. Do not move a lit grill to a more comfortable spot just because it is cold.

Dress for the Job

This is the layered part. A jacket you can move in, sleeves that are not loose over the flame, and something warm for the person who is standing still while everyone else goes inside. Whoever holds the tongs in October is doing a small act of service for the table.

A Nod to the Person at the Grill

Every family has one. The person who stays out there, turns the food, and reports back with a serious face. That is the person the Grill Reaper: Fear the Flavor T-shirt is written for. It sits in the Harvest Forge collection with the rest of the season’s designs.

For the ceremony behind it all, The Grill Is a Ceremony is a good companion read.

The season adds a layer. The fire still works.
